Creamy, smooth, with a hint of vanilla and just the right amount of sweetness- you might not even guess that this white chocolate is vegan.
I was honestly shocked at how easy this was to make. I was so worried that it wouldn’t take, or wouldn’t turn out, and it ended up turning out just like REAL white chocolate- only better because it wasn’t overly sweetened and you could actually taste the flavor, not just the sugar.
The chocolate is sweetened with a bit of powdered sugar, and lightly flavored with real vanilla bean grains. A little bit of powdered coconut and cashew butter make this vegan chocolate the creamy deliciousness it is.
The only down side to this chocolate, is you can’t use it in baked goods like you would use regular white chocolate. It won’t hold together, and will just melt. However, what I tried, and ended up being equally as good, is just adding it to my cooled baked cookies, and it was like I was eating a cookie with white chocolate.
So go ahead and try this white chocolate! It’s so easy and quick to make. I’m excited to see what you all think!!

Easy Vegan Vanilla Bean White Chocolate
Creamy, smooth, with a hint of vanilla and just the right amount of sweetness- you might not even guess that this white chocolate is vegan.
Ingredients
- 1/3 cup raw cocoa butter or 50 grams
- 1 tbsp coconut milk powder
- 2 tbsp cashew butter
- 3 tbsp powdered sugar
- 1/4 gousse vanilla bean
Instructions
-
Melt the cocoa butter using a double boiler method. In a sauce pan, bring water to a boil, and then in a bowl placed on top of the saucepan, stir the cocoa butter until it is completely melted.
-
Then add the coconut milk, cashew butter, powdered sugar, and the grains from the inside of the vanilla bean. Stir until well blended and all clumps removed. I was able to do this with just a spoon. No need for any special blender or mixer.
-
In a parchment lined container (I used a rectangular tupperwear container that was about 8 by 4 inches) pour the white chocolate mixture, and let it spread to evenly cover the surface of the container. Depending on the side of your container, the thicker or thinner your chocolate will be. With a smaller container, you will have thinner chocolate.
-
Place the container in the refrigerator for at least 30 minutes. Remove from fridge and enjoy! Bon appétit!
