A super easy and quick whole30 lunch that will satisfy every one of your cravings. Creamy avocado, crispy bacon, and warm sweet potatoes, this lettuce wrap is a real treat!
While doing the whole30, there’s just some days where you want a quick and easy lunch, with no real cooking involved. A few days ago, I was having one of those days, which is when I decided to make this whole30 BLT with sweet potatoes.
The sweet potatoes help make the BLT lettuce wrap more substantial, while also adding a light sweetness. The only two things you really have to cook are the bacon and the sweet potato toasts, but often times I like to make these ahead of time as part of my breakfast meal prep. Typically at the beginning of the week I will make an entire pan of sweet potato toasts and then save them in the fridge to have for my breakfasts throughout the week. That way, making this BLT comes together in no time and it’s also a satisfying meal- more satisfying than a salad in my opinion.

Whole30 Sweet Potato BLT
A super easy and quick whole30 lunch that will satisfy every one of your cravings. Creamy avocado, crispy bacon, and warm sweet potatoes, this lettuce wrap is a real treat!
Ingredients
- 2 full Romaine heart lettuce leaves
- 1/2 avocado, mashed
- 1 slice of bacon
- 2 slices of roma tomato
- 2 slices of turkey
- 2 slices of sweet potato toast
Instructions

In a frying pan on medium heat, cook 1 slice of bacon to your liking. Typically I cook mine for 3-4 minutes on each side, but this will depend on your oven and how crispy you like your bacon.

In a small bowl, remove the meat of the avocado and mash with a fork. Set aside.

Take one slice of romaine heart lettuce and cut in half. Then stack the two half pieces on top of each other. Next, place the two slices of turkey on top of the lettuce. Then spread out the avocado mash, and add the cooked bacon and tomatoes. Lastly, top with sweet potato toast. You can see how to make sweet potato toast {here}.

With the remaining piece of romaine lettuce, once again cut in half and stack on top of one another to close your BLT. Bon appétit!

Wrap à la laitue garnie de bacon, de tomates, et d'avocats
Ingredients
- 1 tranche de bacon
- 1/2 avocat, écrasé
- 2 feuilles de la laitue romaine
- 2 tranches de dinde
- 2 tranches de tomates
- 2 toasts de patate douce
Instructions

Dans une poêle à feu moyen, cuire le bacon entre 3 et 4 minutes sur chaque côté.

Écraser l'avocat dans un petit bol. Mettez-le à côté.

Coupez la feuille de laitue qui reste en deux et empilez-le sur le wrap pour que vous puissiez le fermer. Bon dégustation!
