Dark Chocolate Candied Orange Blondies

A buttery and moist blondie balanced out by hints of acidity from the candied oranges, which marries beautifully with the dark chocolate. These blondies are a true treat and a fun change from your basic blondies.

Ingredients

  • 1/3 cup vegetable shortening
  • 1/3 cup brown sugar
  • 1/4 cup agave nectar
  • 1 egg
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100 grams dark chocolate chopped into chunks
  • 1/2 cup candied orange pieces finely chopped

Instructions

  1. Preheat the oven to 350 F. In a large bowl, mix the vegetable shortening, brown sugar, agave, and egg until smooth. Then add in the almond butter and vanilla and mix until smooth.

  2. Next, add in the almond flour, coconut flour, baking soda, and salt. Mix until smooth.

  3. Lastly, add in the chocolate chunks and candied orange pieces and spread evenly throughout mixture.

  4. In a parchment lined 8 x 8 baking sheet, evenly spread the batter and place in the oven for 30 to 35 minutes. The bars will have risen quite a bit by the end and will have a light golden brown color on top when they're done. Let cool for at least 15 minutes before tasting. Bon app├ętit!
